Filipino Longganisa-Style Pork BBQ Skewers

Ingredients

  • 500g pork mince

  • 4 cloves garlic, very finely minced

  • 1½ tbsp soy sauce

  • 1 tbsp soft brown sugar

  • 1 tbsp RoniB's Kitchen Ihaw Ihaw BBQ Sauce

  • 1 tbsp vinegar — ideally cane or cider vinegar

  • ½ tsp smoked or sweet paprika

  • ½ tsp ground black pepper

  • ½ tsp salt

  • 2 tbsp breadcrumbs

  • 1 egg yolk

  • 2 spring onions, finely chopped — optional

  • Extra Ihaw Ihaw BBQ Sauce for glazing

Directions

  1. Mix everything very thoroughly until the pork becomes slightly sticky. Refrigerate for 30–60 minutes.

  2. Divide into 6–8 portions. Mould each portion firmly around a soaked bamboo skewer into a long, fairly thin sausage shape.

  3. BBQ over medium heat, turning frequently. Once they're nearly cooked, brush generously with Ihaw Ihaw and continue turning until you get those slightly sticky, charred edges.

  1. Mix together - 2 tbsp vinegar + 1 tbsp soy sauce + chopped red onion + garlic + black pepper + a little Labuyo if you want heat.
