This is the kind of chicken you make when you want dinner sorted and everyone asking for seconds.
It's a humble braise. Chicken legs and thighs go into a pan with garlic, soy sauce, oyster sauce, ketchup and calamansi, then a cup of Sprite (or any lemon soda). That might sound odd if you haven't grown up with it, but it's very Filipino. The soda adds a gentle sweetness and helps the sauce reduce down to a dark, sticky glaze that clings to the meat.
It's salty, sweet, garlicky and a little sharp from the calamansi, with black pepper to finish. Serve it over steamed rice with something green on the side, like the bok choy in the photo, so there's plenty of sauce to mop up.
Cheap cuts, a handful of store-cupboard ingredients, and big flavour. No fuss.

Ingredients
- 1 kilo chicken legs and thighs, skin on
- 1 can Sprite or 7Up
- Half a bulb of garlic, minced
- 60ml of lemon juice
- 60ml soy sauce
- 60ml banana ketchup
- 30ml oyster sauce
- 1 tsp ground pepper
- 2 tbsp cooking oil
Directions
Place the chicken in a bowl.
Add all the ingredients in the bowl and mix well with the chicken. Leave to marinade at least 1 hour. Set aside.
After 1 hour, remove the chicken from the marinade. Set the marinade aside. This will be used later.
Heat oil in a deep pan. Lightly fry the chicken pieces until golden brown.
Add the marinade in the pan. Cook covered over medium heat for about 25 minutes.
Turn the chicken pieces once in a while until the sauce thickens.
