Adobo Crispy Pork

Ingredients

  • 1 slab of pork belly (about 750g)

  • 1 jar of RoniB's Kitchen Adobo Sauce
  • Salt, to taste

  • 2 cloves garlic crushed

Directions

  1. Heat oven to 180C.

  2. In a baking dish, place the pork belly and pour a jar of adobo sauce. Cover with aluminium foil.

  3. When the oven is ready, roast for about 1 hour or until pork is tender.

  4. When done remove pork and prick the skin multiple times using a fork making sure you do this for the whole skin.

  5. Separate the marinade/cooking liquid and pour into a deep pan. Reduce until thickened.

  6. Coat the pork skin with a good layer of salt and set aside. This will dry out the skin to ensure maximum crispiness.

  7. Place pork belly in a baking dish with a rack and brush off the salt.

  8. Switch your oven setting to 'grill' mode. Place the baking dish at the lower half of the oven and grill for about 20 minutes or until skin becomes crispy. You may also use an air fryer. Use the highest setting and cook for 20 minutes or until skin is golden and crispy.

  9. Taste. Add more salt if desired.
