Ingredients

  • 3 kg Ham (deboned or bone-in)
  • 750 ml Beer (San Miguel lager recommended)
  • 1.5 L Pineapple juice
  • 475 ml Sprite or 7-Up
  • 240 g Light brown sugar
  • 2 Tbsp. Salt
  • 1/4 tsp. Cloves
  • 500 ml of Cooking liquid from the ham
  • 1 can (435 g) of Pineapple cubes/chunks
  • 150 g light brown sugar
  • 50 g mustard powder
  • 3 Tbsp. RoniB's Kitchen Tamarind Jam
  • Whole cloves (optional, for garnish)

Directions

  1. In a large pot, combine beer, pineapple juice, Sprite/7Up, sugar, salt, and cloves.
  2. Submerge the ham in the liquid. Bring to a boil, then reduce heat to a gentle simmer. Cover and cook for 2–3 hours, or until the ham is tender.
  3. Once cooked, carefully remove the ham and set aside. Reserve 500 ml of the cooking liquid for the glaze.
  4. In a saucepan, combine the reserved cooking liquid, pineapple cubes (with juice), light brown sugar, mustard powder, and RoniB's Kitchen Tamarind Jam.
  5. Simmer over medium heat, stirring occasionally, until the glaze reduces and thickens (about 10–15 minutes).
  6. Preheat the oven to 200°C (390°F).
  7. Place the cooked ham in a roasting tray. Score the surface in a crisscross pattern and stud with whole cloves if desired.
  8. Generously brush the tamarind glaze all over the ham.
  9. Roast for 20–30 minutes, basting with glaze every 10 minutes, until the ham is caramelized and golden.
  10. Slice up the ham and serve with extra tamarind glaze on the side for added flavour.
