Squid Adobo

Here's another way you can cook adobo. This time we are using squid. Really easy and only uses less than 5 ingredients. Good for a weekday meal.

Ingredients
- 500 fresh or frozen squid
- 3 tbsp oil
- 1 jar RoniB's Kitchen Adobo Sauce
- 1 small onion thinly sliced
- 1 bay leaf
- toasted garlic chips (optional)
Directions
Remove head, tentacles, cartilage and innards from the body of the squid. Discard except for the tentacles (make sure you cut it just above the eyes).
- Cut the body into rings.
Wash thoroughly, drain and place in a bowl.
- Shake the adobo sauce and pour over bowl with the squid and marinade for about 1 hour. Drain and save the marinade.
After 1 hour, heat oil in a pan. Add onions and saute until fragrant and transparent.
- Add the drained squid and saute until juices evaporate. This will take about 10 minutes.
- Strain the marinade and add to the pan and simmer for another 10 minutes.
Sprinkle toasted garlic chips, if using.
