Spiced Heritage Carrot & Tamarind Glazed Red Onion

Ingredients
- 1 carrot or 3 small carrots
- 1 tsp garam masala
- 2 tbsp RoniB's Kitchen Tamarind Jam
- 1 whole red onion peeled
- 5 tbsp RoniB's Kitchen Tamarind Jam

Directions
Spiced heritage carrot
- Wash and clean the carrots
- In a small bowl mix together the garam masala and Tamarind Jam
Create a pouch using aluminium foil and place the carrot(s) then drizzle with the spiced jam mixture. Close the foil pouch.
- Roast in the oven at 180C for 30-45 minutes or until carrots are soft.
- Open pouch and continue to roast until glaze thickens.
Tamarind glazed red onion
- Cut the top and base of the onion and peel the skin off.
Create a pouch using aluminium foil and place the onion then drizzle with the Tamarind Jam.
- Close the foil pouch.
- Roast in the oven at 180C for 60-75 minutes or until carrots are soft.
- Open pouch and continue to roast until glaze thickens.
