Laing is spicy dish made from taro leaves and hails from the Bicol Region of the Philippines. This recipe uses kale instead of taro to make is easy to cook at home.

Ingredients
- cooking oil
- 5 cloves garlic minced
- 1 onion finely sliced
- 1 inch ginger cut in thin slices
- 1 bag of curly kale

5 tsp RoniB's Kitchen Extra Hot Garlic Chilli Paste (add more if desired)
- 1 can of coconut milk
- 1/4 cup water
- 1 tbsp shrimp paste or fish sauce (substitute with salt)
- crushed black pepper to taste
Directions
- Heat oil in a pan.
- Add onions and cook until fragrant.
- Add garlic and ginger.
- Add 3 tsp of RoniB's Kitchen Garlic Chilli Paste.
- Add the curly kale and mix well.
- Add the coconut milk and water- mix well.
- Cover and cook over medium heat. Bring to boil then lower heat and simmer covered for about 30 minutes or until sauce has thickened.
- Season with shrimp paste or fish sauce (if using) or salt and crushed black pepper.
- Add the remaining 2 tsp of RoniB's Kitchen Garlic Chilli Paste.
- Adjust seasonings.
- Add toppings (like any leftover meat)- if using.
