Kalamansi No Bake Cheesecake

This no bake cheesecake is a dessert you can easily make when you suddenly have visitors around. It can also be made early. Just freeze and thaw when needed.

Kalamansi No Bake Cheesecake

A zesty twist on a classic dessert, this no-bake cheesecake blends creamy cream cheese with bright Kalamansi Marmalade and sits on a buttery graham cracker base. Quick to prepare and perfect for entertaining or make-ahead treats.

Ingredients

  • 350g Graham crackers crushed
  • 200g butter melted
  • 2 packs of cream cheese softened
  • 100g condensed milk
  • 5-8 tbsp Kalamansi Marmalade (add more if desired)
  • dark chocolate bits (optional)

Directions

  1. Place Graham crackers in a plastic bag and crush them finely.
  2. In a bowl, add the crushed Graham crackers and pour in the melted butter. Mix well making sure the Graham crackers are all coated. If the butter is not enough, melt some more and add.
  3. Line ramekins with Graham crackers and place in the freezer to set.
  4. In another bowl, whip the cream cheese, slowly adding the condensed milk and Kalamansi Marmalade. Adjust quantities of the milk or marmalade according to taste.
  5. Remove ramekins and either pipe in or spoon in the cream cheese mixture. Top with dark chocolate bits, if using. Return to the freezer to set.
