Ingredients

  • 600g heritage carrots or normal carrots, peeled or scrubbed
  • 2 tbsp honey
  • 1–2 tsp RoniB’s Kitchen Garlic Chilli Oil (adjust to taste)
  • 1 tbsp olive oil
  • Salt & pepper
  • Optional: chopped parsley for garnish

Directions

  1. Preheat oven to 200°C (fan 180°C).
  2. Prepare carrots: Cut large heritage carrots in half lengthways; leave small ones whole.
  3. Season: Place carrots on a baking tray. Drizzle with olive oil, salt, and pepper.
  4. Roast for 15 minutes
  5. Make hot honey glaze: Mix honey with Garlic Chilli Oil.
  6. Glaze carrots: Remove tray from the oven, drizzle the hot honey mixture over the carrots, and toss gently.
  7. Roast again for 10 more minutes until caramelised and tender.
