These Hot Honey Heritage Carrots bring a bright, festive twist to your Christmas table. Roasted until caramelised, then glazed with honey and a drizzle of RoniB’s Kitchen Garlic Chilli Oil, they deliver the perfect balance of sweetness and gentle heat. A quick, flavour-packed side dish that pairs beautifully with roasts, Filipino-style pork belly, or any holiday spread.
Ingredients

600g heritage carrots or normal carrots, peeled or scrubbed

2 tbsp honey

1–2 tsp RoniB’s Kitchen Garlic Chilli Oil (adjust to taste)

1 tbsp olive oil

Salt & pepper

Optional: chopped parsley for garnish
Directions
Preheat oven to 200°C (fan 180°C).
Prepare carrots: Cut large heritage carrots in half lengthways; leave small ones whole.
Season: Place carrots on a baking tray. Drizzle with olive oil, salt, and pepper.
Roast for 15 minutes
Make hot honey glaze: Mix honey with Garlic Chilli Oil.
Glaze carrots: Remove tray from the oven, drizzle the hot honey mixture over the carrots, and toss gently.
Roast again for 10 more minutes until caramelised and tender.
Recipe Note
Drizzle with a little extra honey or Garlic Chilli Oil if desired. Garnish with parsley.
