Ingredients
- 600g heritage carrots or normal carrots, peeled or scrubbed
- 2 tbsp honey
- 1–2 tsp RoniB’s Kitchen Garlic Chilli Oil (adjust to taste)
- 1 tbsp olive oil
- Salt & pepper
- Optional: chopped parsley for garnish
Directions
- Preheat oven to 200°C (fan 180°C).
- Prepare carrots: Cut large heritage carrots in half lengthways; leave small ones whole.
- Season: Place carrots on a baking tray. Drizzle with olive oil, salt, and pepper.
- Roast for 15 minutes
- Make hot honey glaze: Mix honey with Garlic Chilli Oil.
- Glaze carrots: Remove tray from the oven, drizzle the hot honey mixture over the carrots, and toss gently.
- Roast again for 10 more minutes until caramelised and tender.
