Fiery Pineapple Chicken Traybake

Ingredients
- 1 can pineapple slices
- 8 pcs chicken thighs
- 1 onion chopped
- 4 cloves garlic minced
- 1 inch ginger thinly sliced
- 1 tsp dried herbs

1-2 tsp RoniB’s Kitchen Garlic Chilli Oil

150ml RoniB’s Kitchen Banana Ketchup
- 1/2 tsp white pepper
- 1 tbsp soy sauce
- 2 tbsp sugar
- salt to taste
Directions
- Preheat oven to 180C.
- Salt and pepper chicken thighs and place in an ovenproof dish.
In a bowl, mix all other ingredients except for the pineapple slices.
- Pour over the chicken and top with the pineapple slices.
- Bake in the oven for about 45-55 minutes or until the chicken is cooked.
- Serve hot.
Optional
- Place chicken and pineapple slices on a serving plate.
- Pour the sauce in a small pot and reduce.
