The Boracay Calamansi Muffins

I had the privilege of visiting this island in the '90s when there were only a few resorts and few people knew about the place.

The beach was pristine and empty; only a few visitors and the rest were the islanders. It was a beautiful escape from the city. Everything was simple and I delighted in everything cooked on the barbecue.

Returning in the mid-noughties, I saw the island filled with resorts and people. There were restaurants serving every cuisine you can imagine. In the daytime, there were people everywhere; walking, sunbathing, playing beach volleyball, eating, drinking, playing water sports, having a massage, or getting a henna tattoo. It was a kaleidoscope of activity.

As the sun sets, the beach comes alive with music from the bars and the party begins. These parties became legendary. It proved a bit too much for the island's sustainability that it was closed for 6-months. Now, the island is open once again but with a set of rules to help preserve its natural beauty for everyone to enjoy.

White Beach is the famous stretch of white sand you will see in a lot of travel magazines. There is more to Boracay than just white beach. There are more hotels starting from the posh ones to the more budget-friendly ones dotted around the island. More choices!

There is another thing that came from this island that has become famous and it is the Calamansi Muffins by Real Coffee. I heard it from my friends who told me to find this place and try it when I mentioned that we will be visiting the island. Of course, this also meant, "bring us some!" Oh, how I missed that kalamansi taste!

KALAMANSI MUFFINS BORACAY STYLE

As you know, we've created a Kalamansi Marmalade and you can use this as a substitute for the kalamansi juice in the recipe. Remove or reduce the sugar and the marmalade is already sweet in itself.

This is a great snack with a good cup of coffee or tea.
